Standing Rib Roast

Sizes and approximate roasting times to medium rare (125ºF)

5 bones, 12 lbs / serves 12 to 16 / roasts about 3 hours at 325ºF
4 bones, 9.5 lbs / serves 9 to 12 / roasts about 2.25 hours at 325ºF
3 bones, 8 lbs / serves 6 to 8 / roasts about 2 hours at 325ºF
2 bones, 4.5 lbs / serves 4 to 6 / roasts about 15 min at 450ºF then 45 minutes at 325ºF

Beef Roast

Cook at 325ºF

Rare / 120ºF / 12 to 13 minutes per pound
Medium Rare / 125º F / 15 minutes per pound
Medium / 140º F / 17 to 20 minutes per pound

Stuffed Pork Loin Roast

Sear in a hot skillet, then 15 minutes per pound at 375ºF
Take temperature after 45 minutes, and pull out at 156ºF, and let rest 10 to 15 minutes

Roasted Birds

Roast in the oven at 375ºF, about 12 minutes per pound
Remove from oven at 140ºF and let rest for 20 minutes
