There is a time in the deepest part of the winter, at the exact mid-point, where–regardless of traditions, heritage, beliefs, or any of those other things that we have all come to use to define ourselves–we are all given a time of peace. A moment of celebration. A chance for merriment and neighborship. It’s as if everybody stops and turns and hugs; as if we are all saying, “Well done! Well done, everyone! We’re halfway out of the dark.”

In whatever way you choose to do it, we would like to help you celebrate with food, wine, and all the glad tidings and joys.


The holiday table is a cornucopia of deliciousness: wines, cheeses, vegetables, sweets, and most importantly the centerpiece: Meat. This year, we offer a wide variety of meats for your celebration and enjoyment.

Beef

Rib Roast

Bone-in: Can be frenched or not. We recommend a 2-bone roast to feed 4-6 people.
Boneless: We recommend a half-pound per person.

NY Strip Roast

Great alternative to a ribeye: delicious and economical. We recommend a half-pound per person.

Tenderloin Roast

Can be ordered as a half-tenderloin or whole tenderloin. A whole tenderloin would feed 8-10 people.

Beef Wellington

Tenderloin covered in mushroom duxelles, housemade pâté, and then wrapped in puff pastry to be baked in the oven. Cut into individual 6oz filets. Order quantity by 6oz filet.

Lamb

Rack of Lamb

Can be ordered as a half-rack or whole rack. Can be frenched or not. A whole rack would feed 3-5 people.

Leg of Lamb

Can be ordered bone-in or boneless. We recommend a pound per person (bone-in) or a half-pound per person (boneless).

Pork Rillade

Boneless pork loin cut thin and rolled onto itself, stuffed with mushrooms, herbs, and chestnuts. Tied up and ready to cook in the oven. Can be ordered as a whole loin or a half-loin.

Pork Rib Roast

Bone-in: Can be frenched or not. We recommend a 2-bone roast to feed 2-4 people.

Pork Loin Roast

Boneless: We recommend a half-pound per person.

Can be ordered as a whole ham (8-9 lbs), boneless mini-ham (2-3 lbs), or sliced by the pound.

Can be ordered in one of there size ranges: 8-10 lbs, 10-12 lbs, 12-14 lbs. $13/lb

Whole Turkeys

All turkeys will be frozen. Please allow for time to thaw before cooking for you and your guests.

Kelly Bronze

The Cadillac of Turkeys. The Kelly Bronze turkeys are raised by our good friend Judd Culver in Crozet, VA. The heritage bronze breed was revived by Dr. Kelly (one of the few people in the world to have a doctorate in turkey husbandry), and has been voted the best turkey in Britain for the last ten years and running!

These turkeys are not just free-range: they are wild-foraging. They are allowed to roam the farm on their own, living their lives much like a wild turkey does. After harvest, the birds are hand-plucked and dry-hung like a traditional game bird. This means not only do the turkeys not need brining, but the meat is also more flavorful, denser, and cooks faster: just like a dry-aged steak does.

The Kelly Bronze turkeys are $12/lb. They come in a neat black box with cooking instructions and a special meat thermometer.

Heritage Black

Premium Heritage Breed. The Heritage Black turkeys are a very old heritage turkey breed, probably the first to be developed from Native American stocks. Some of the first turkeys taken to Europe in the early 16th century were the Black turkeys, where they became very popular, particularly in Spain. The turkeys are a naturally-mating, slow-growing breed particularly suited for outdoor free-roaming, and produces a very flavorful, tender meat. These turkeys are raised by the Ashley family co-op in North Carolina.

The Heritage Black turkeys are $11/lb. Very limited. Call as soon as possible.

Ashley White

Naturally Farmed. The Ashley White turkeys are raised with love by the Ashley family co-op in North Carolina. These turkeys are a white hybrid breed (a farmer’s cross intended to produce larger birds with bigger breast meat), organically grown, raised on pasture, and considered “happy turkeys”. 🙂

The Ashley White turkeys are $7/lb. Very limited. Call as soon as possible.

Turkey Sizes

We recommend one pound per person will feed everyone, but leave little leftovers. To have a bountiful meal, we suggest adding a few extra pounds to the number of guests. This equation for determining your turkey size can be illustrated by the following equation:

[Number of guests] + [2 to 4 lbs] = [turkey size range]

All of the wines we carry are made by farmers (no purchased fruit or industrial farms). They are made with care, love, and attention to detail (which means no added chemicals, sustainable–often organic or biodynamic–farmed often without the use of commercial yeast.) We believe in natural, clean wine.
