Kelly Bronze

The Kelly Bronze turkeys are raised by our good friend Judd Culver in Crozet, VA.

The heritage bronze breed was revived by Dr. Kelly (one of the few people in the world to have a doctorate in turkey husbandry), and has been voted the best turkey in Britain for the last ten years and running!

These turkeys are not just free-range: they are wild-foraging. They are allowed to roam the farm on their own, living their lives much as a wild turkey does.

After harvest, the birds are hand-plucked (many quills remain) and dry-hung like a traditional game bird. This means not only do the turkeys not need brining, but the meat is also more flavorful, denser, and cooks faster: just like a dry-aged steak does.The Kelly Bronze comes in a neat black box with cooking instructions and a special meat thermometer.

Heritage Bronze

The Heritage Bronze turkeys are raised in Albemarle County, Virginia at Heritage Glen Farm.

These heritage breed turkeys are free-range and wild-foraging, similar to the Kelly Bronze. They are allowed to roam the farm on their own, living their lives much as a wild turkey does.

These birds are processed so that there are fewer pinfeathers and quills than you typically find in the Kelly Bronze bird, and so that it will not need brining.

Turkey FAQ

How large of a turkey do I need?Generally speaking, we suggest one pound per person. This should be enough to feed everyone, but will leave only a little leftovers. If you plan to eat turkey for days, add a few more pounds to your goal.
Are these turkeys organic?In a word, no. Hardly any of the meats we carry are certified organic, and that's because the farms we work do not feel a stamp of certification is worth the time and energy that process requires. That said, there is nothing unnatural about these birds nor are they raised inhumanely. How do we know? We get to know and trust the farmers we work with.
What is a heritage breed?
Heritage breeds are old lines of turkeys. If we look back in history, all turkeys were heritage breeds, and many more still were wild. The heritage breed turkeys have been kept by reproducing within the breed, rather than crossing multiple turkey breeds together. Generally speaking, heritage breed turkeys tend to be smaller in size and the amount of meat in the breasts is pretty close to the amount of meat in the legs.
What is a white hybrid breed?White hybrids breeds are farmer's crosses. Over time, farmers have bred multiple turkey breeds together aiming for producing the largest birds with the biggest breast meats. They are typically much much larger than their heritage breed counterparts and there can be up to twice the amount of meat in the breasts than the meat of the legs. If you are looking to feed a big table or want the Norman Rockwell style big bird, this is the way to go.
Do I need to brine my turkey?Brining adds moisture and flavor to your turkey's meat, making it more flavorful. We do recommend brining white hybrid turkeys as their broader breasts tend to be a bit dryer and they are large enough that they require a long cooking time. We offer a brining kit (a proportioned salt and spice packet) to expedite your brining process. Simply add the contents of the kit to a cooler or other large vessel, add water and your turkey and let sit for a night or two before cooking.

Heritage breed turkeys do not require brining as they are typically smaller and more flavorful on their own. While brining could add some spice and salt flavor, it could also pull some of the natural turkey flavor out of the bird. Only brine heritage birds if you really want to.

We do not recommend brining the Kelly Bronze turkeys at all as these turkeys have been hand-plucked (rather than boiling to de-feather) and they are dry-aged, keeping the natural moisture and flavor in the bird.
Do you offer cooked turkeys?We do not.

However, the Kelly Bronze turkey typically cooks in about only two hours (because it is dry-aged) and it comes in a handy little black box with cooking instructions and a meat thermometer.

We also offer a variety of side dishes for your table to make the building of your meal simpler and expedited without compromising on quality or deliciousness.
